PACK THEM THE NIGHT BEFORE!
I know this can seem like a hassle… you have just brushed every ones teeth, got pajamas on, backpacks and outfits are ready, kids have been read to and tucked in.. you desperately want to call it I day! But I promise you… getting out that last burst of energy and packing their lunches will not only allow you to get some extra sleep in the morning, but you can send them to school knowing you didn’t forget anything. I tend to forget stuff if I pack the kids things in the morning, so it’s always more successful when I get it all done the night before.

My kids easily get bored with the same old sandwich, as most kids do! Food ends up getting wasted if I pack them the same lunch each day for too long, that is why it is important to change things up every week or two. One of my favorite breakfast meals is avocado spread on toast… I thought to myself the other day.. why not add that to a sandwich along with their favorite veggies and vegan cheese?! This resulted in a colorful and fun sandwich that not only tastes great, but is packed full of nutrition that is going to give your child the energy they need to get through the long school day.
- 2 ripe avocados, mashed
- 1 tbsp lemon juice (or lime if you don't have any lemons)
- 2 tbsp nutritional yeast
- ¼ tsp garlic powder
- ¼-1/2 tsp onion powder (start with ¼ tsp and add more to taste)
- ⅛ tsp chili powder (or more to taste)
- ¼ tsp sea salt (or more to taste)
- freshly ground pepper to taste
- chopped fresh herbs such as parsley, cilantro, or chives (optional)
- Mash the avocados, place them in a small bowl along with the rest of the ingredients. Mix well, taste, and add more seasoning if desired.
- That's it! It's that simple. The spread should last in the fridge for 2-3 days, though the avocados already start to brown on the second day so it's best to always make this fresh.
There are so many veggies you can add to this sandwich to make it the ultimate vegan lunch that your children will love! Plus this spread is good for 2-3 days in the refrigerator, meaning you don’t have to remake it each night.
