Easy Vegan Burrito Bowls
Hnads down… vegan burrito bowls are one of my all time favorite meals! Why? Because not only are they incredibly easy to make, but there are so many different ways to enjoy them. There is no one recipes to follow, you basically just put all of your favorite ingredients together in a bowl and you are ready to enjoy. I am thrilled to share with you one of my latest vegan burrito bowls that the kids and I enjoyed for dinner this evening.
We have been eating rice a lot these past few weeks, so I decided to do half rice and have quinoa for this burrito bowl. Once your rice, qunioa or combinatiion of the two is done, place a layer of it at the bottom of your bowl.
Then I topped my vegan burrito bowl with a section of sweet corn, a section of black beans, and a section of tome diced roma tomatoes that were sauteed on the stove with green onions and regular onions. I chopped up some greens to add some color to the dish. Your final step is to season your burrito bowl up a bit! I sprinkled tons of chia seeds over the top, as well as some basil and parsley. Lastly, I sprinkled some delicious vegan Daiya mozzorella cheese on top. There are a variety of other toppings you can place on your burrito bowl; fresh squeezed lime juice, diced avocados, guacamole, salsa… really, the possibilities are endless!
