Valentine's Day Inspired Chocolate Chip Cookie Ice Cream Sandwiches

During the summer when I was a little girl growing up in a kid friendly neighborhood, we often found the ice cream truck roaming our streets. There was always one very special and delicious treat I looked forward to getting, and that was a chocolate chip cookie ice cream sandwich. There is just something so delicious and magical about two soft and chewy chocolate chip cookies, a heaping serving of ice cream sandwiched between the middle, and a little extra special treat coated on the sides. Fast forward a decade or so and now I have three wonderful children of my own to spoil with treats from the ice cream truck… except… have you seen the prices now a days? I can not justify footing $20 every time that musical tune blaring from the ice cream truck strolls past my house. Being the frugal mommy that I am decided there has to be a less expensive way to enjoy a favorite treat from my past time because lets face it… prices aren’t much cheaper at the grocery store either. How difficult could it be right? Two cookies, ice cream and candy to decorate with… how could I go wrong on this one? I was determined to create my very own Valentine’s Day inspired chocolate chip cookie ice cream sandwiches and share them with some friends and family!

Turns out I was actually right… this was a very simple treat to make from scratch! If you have a favorite chocolate chip cookie recipe you would rather use, go for it, otherwise I will include the one I used.

After making your cookies you are really going to have to use some extreme will power and resist the urge to eat them… let those babies cool off! If you don’t let them cool off completely then you are going to have a mess of a time trying to get the ice cream sandwiched between two of them. I took my ice cream and literally put a scoop into my hand a molded it into a saucer shape prior to placing it on top of my first cookie. I tried other methods, but honestly this was the easiest (not the cleanest) but hey it get the job done!

Once you have gotten the ice cream between two chocolate chip cookies, you are ready to add some candy to the ice cream. I wanted to give mine a Valentine’s Day theme and the M&M’s® Red Velvet candy seemed like the perfect option for this! After decorating with the candy you should wrap them up in plastic and place them in the freezer, this will help to keep the candy in place.

My son was so excited when we were making these together, especially when I told him we were going to surprise his older sister once she got home from school. As soon as that big yellow school bus stopped in front of our driveway and kids came piling out, we had a plate of Valentine’s Day treats for my daughter and her neighborhood friends. We embellished the plates with a few of the ultra delicious DOVE® Promises, which they of course… LOVED! I spent that evening cleaning up the little wrappers that were littered all over the backyard, but it was totally worth it!

Valentine’s Day Inspired Chocolate Chip Cookie Ice Cream Sandwiches

Ingredients
  1. 2C 2TBSP Flour
  2. 1/2 tsp Baking Powder
  3. 1/2 tsp Baking Soda
  4. 1/2tsp salt
  5. 3/4C Butter, softened
  6. 1/2C Brown Sugar
  7. 1/2C White Sugar
  8. 1 Egg
  9. 1/2tsp Vanilla
  10. Vanilla Ice Cream
  11. 3/4C Chocolate Chips
  12. M&M's® Red Velvet Candy
Instructions
  1. Mix butter and both sugars. Add egg and vanilla. Slowly add the dry ingredients. Once everything is combined, add chocolate chips by hand. Scoop 10 balls onto a baking sheet, push to create small disc, bake for 8 minutes. Let cookies cool before filling with ice cream. Add M&M's® Red Velvet Candy around the sides. Let sit in freezer 10 minutes before serving to allow the candy to stay in place.

  1. I wish I had memories of the ice cream truck when I was growing up, but I only remember every now and then when I was visiting my grandparents. Maybe I need to make some of these and create my own memories! #client
