Smashed Chickpea and Avocado Sandwich

People are always asking how I get my children to eat to healthy and the answer is pretty simple… make food fun! One of my favorite things to do is challenge myself to create unique and fun foods that the kids will enjoy and are also nutritional. I decided to take a few of their favorite foods (chickpeas and avocados) and find a way to make them into a sandwich. Since school started here in Georgia on the first of August, I am challenging myself to get creative with the kids sandwiches. This is a staple food in most children’s lunchboxes and there are so many ways to take that boring old PB&J and provide them with something more thrilling!

Smashed Chickpea and Avocado Sandwich

All that you need to create this one of a kind sandwich is a can of chickpeas, two ripe avocados, lemon juice and some seasoning. You can go ahead and boil the chickpeas to soften them up a bit, but I have found that cooking them in the microwave for 1 minute gets the job done. Mash the chickpeas up with a fork, I like mine on the chunkier side and also leave some whole chickpeas throughout the mix. Next you are going to take your two ripe avocados and mix them into the chickpeas until the avocados are a creamy texture. Think of it like mayo and tuna fish, the avocado is your mayo and the chickpeas are the tuna.

Then you are going to mix in some lemon juice, garlic powder, salt and pepper… mix well and serve immediately. While this was intended for sandwiches, the kids and I have also enjoyed using it as tip with crackers and such.

My children are so amazed by this amazing green concoction, it truly brings life to a sandwich! Add your favorite toppings and serve in between two slices of Nature’s Harvest® Bread and you have yourself a healthy sandwich that is far from boring!

Ingredients

  • 6-8 pieces of bread
  • I can chickpeas, smashed (see notes)
  • 2 large ripe avocados
  • 2 teaspoon garlic powder
  • 1 tablespoon fresh lemon juice
  • salt and pepper

Instructions

In a large bowl, add chickpeas and use a fork to smash them. Add the avocados, garlic powder, salt, pepper, and lemon juice and combine them together.

Notes

Boil the canned chickpeas for 6-8 minutes until it’s texture gets soft but not mushy. The avocado and chickpea mixture changes it color after couple hours so I’d suggest eating it immediately or prepare everything in advance and add avocados right before serving.

  1. My daughter has never had chickpeas so I’m not sure how she would respond to this flavor combination but it looks fantastic to me! Full of so many good vitamins, proteins, and nutrients. It looks yummy!

  2. This looks delicious! Avocado is a huge part of a number of our meals each week and chickpeas! Chickpeas have so much to offer both nutritionally and oh so tasty! This looks fantastic.

  3. I am not a big fan of avocado at all, but I try to eat it because it is SO good for you. This sandwich looks amazing and I would try it in a heartbeat! I think the combination of foods would make the avocado taste great! Thanks!
