Ingredients
  1. extra virgin olive oil
  2. 1 yellow onion, diced
  3. 1 red bell pepper, diced
  4. 3 cloves garlic, minced
  5. 8 oz. mushrooms, sliced
  6. 1 (15 oz.) jar marinara
  7. 32 oz. low sodium vegetable broth
  8. 2 cups bow tie pasta
  9. 5 oz. baby spinach
  10. 1/2 cup shredded vegan mozzarella cheese
  11. 1/2 cup fresh basil, torn or thinly sliced
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the onion and saute until softened. Add garlic and bell pepper and continue to saute until pepper begins to soften, being careful not to burn the garlic. Add the mushrooms and saute until mushrooms are cooked.
  2. Stir in marinara and broth and bring to a simmer. Add pasta and simmer until done. Turn off heat and stir in spinach until it has wilted.
  3. Serve with a sprinkle of vegan mozzarella and fresh basil.

  1. I’m a vegetarian, so these types of posts invariably make me happy. Yet I have to wonder if this was the best recipe to start off with? There are many delicious and hearty veggie dinners that don’t have ten thousand ingredients.

    I think part of the reason so many families are “meat-loving” is because of this perception that good vegetarian meals take a long time and have a long list of ingredients, while meat is just one thing that you can cover with some spices/a marinade, pop in the oven, then have dinner around that one item.
