Delicious & Easy Tuna Pasta
The other night I was scrambling around the kitchen and quickly realizing that we were long overdue for a trip to the grocery store. With just pasta in the pantry, tuna in the cupboard, and mayo and eggs in the fridge, I decided it was time to whip up a quick tuna pasta. Now I’m not your typical cook and I am horrible when it comes to following recipes… I do a lot of taste testing and adding ingredients as I see fit. When it comes to any type a pasta salad I believe that your personal preference plays an important factor in the ingredients you choose. I am personally more favorable of a creamier pasta salad and will add a spoon full extra of mayo to give it that perfect touch. I also love eggs in my pasta salads and tend to go a little overboard, but I simply can not get enough of it in my salads,
So basically what I am trying to say is take advantage of the simplicity of this recipe and make it your own! Add those small touches of your favorite spices and veggies or use up some leftovers in the fridge, the possibilities are endless.
I only used a handful of ingredients for this recipe, which includes the following:
- 1 box Rotini spiral pasta
- 2 cans of tuna (drained)
- Mayo (add as much as you prefer)
- 2 large eggs
- salt & garlic pepper
That’s it! How incredibly easy, right? Depending on what I have in the kitchen at the time, I have also added cut up cucumbers, green or black olives and tomatoes to this pasta salad. As I mentioned before, this is a great way to use up leftovers and veggies that may be going bad soon. Don’t be afraid to get creative and try new thing because there are so many ways to tweak this recipes to make it your own. Enjoy and happy cooking!
