Chicken Enchilada Dip

With Cinco de Mayo just around the corner, there is no better time to start planning a fun time with friends and family. This doesn’t have to be a complicated and costly gathering and with this simple chicken enchilada dip, you will have plenty of happy guest!
Here is everything you need for the recipe:
- 1/2 pound chicken (about 1 1/2-2 cups), cooked and shredded
- 2 cups enchilada sauce
- 1 cup black beans
- 1 cup corn
- 1 cup cheddar cheese, shredded
- 1 1/2 cups monterey jack cheese, shredded
- tortilla chips for serving
The first thing you need to do is cook the chicken, your best option is to boil it in some water until it can be easily shredded. Once your chicken is cooked and shredded, allow to cool and then mix it with the enchilada sauce, beans, corn and cheddar cheese and half a cup of the monterey jack cheese. Place the mixture into a shallow baking dish and then sprinkle 1 cup of the monterey jack cheese on top (feel free to add more if you like your dip extra cheesy on top).
Bake the enchilada dip in the oven at 350F until the top is a light golden brown and the sides are bubbling (this generally takes about 15-20 minutes.) Then you are ready to serve your guest and host the most memorable Cinco de Mayo party this year!
