I love trying new recipes with my kids, especially ones that can be included in their lunches. We recently made this simple superfood kale salad and my kids can’t seem to get enough of this sweet and healthy meal!
What’s great about making a superfood salad is that you can customize it to your own likes and preferences. We try to include as many healthy ingredients possible, making sure to pick ones that complement each other well. This particular salad is packed full of lutein, which is widely known to have benefits to eye health. New research has even shown that it can also enhance learning and memory… which makes it the ideal meal to pack in your kid’s school lunch!
Creating meals that are beneficial to my children’s overall health is my ultimate goal when it comes to creating superfood salads. Not only will this salad boost their immune system, but that extra boost of lutein is going to benefit them in many other ways. A recent study showed that children whom consumed higher levels of lutein actually did better on academic exams.
Now don’t think that your school age kids are the only ones to benefit from this superfood salad. Making sure everyone in the family is getting lots of lutein in their diet is essential because it can help improve cognitive function at every stage of life (from infancy to adulthood).
So as I mentioned previously, you can customize your superfood salad however you please, just make sure to include lots of healthy ingredients. Whenever I try to add extra lutein to the meals we are making, I will look through Abbott’s “Brain Healthy Foods Grocery Store List.”
You would be surprised how many really delicious foods contain Lutein, it generally can be found in leafy vegetables, egg yolks, avocados and more. For this super simple superfoods kale salad we used the following ingredients:
- 6 cups kale (chopped)
- 3 cups broccoli (chopped)
- 1 cup dried cranberries & roasted pecans
- 1 cup roasted sunflower kernels
- 1 16 oz bottle sweet & sour dressing
- 2TBSP chia seeds
Mix all of your ingredients together and making sure to cover everything evenly with the dressing. Cover and place in the refrigerator for a few hours and then you are ready to enjoy this super delicious and healthy superfood salad!
