I don’t know about you, but whenever I attempt to try a new recipe… that long list of ingredients quickly turns me away. Breakfast seems to be the busiest time of day for most families and the last thing you need is a recipe that is time consuming. I am so excited to share with you my recipe for three ingredient vegan chocolate protein pancakes, a simple and delicious way to start your morning!

I was shopping at Target.com the other night… which I often find myself doing, my living room looks like Target blew up in there! I happened to come across the Kashi GOLEAN Dark Cocoa Protein Powder and added it to my order, hello free shipping!!
So this recipe is simple enough that I don’t even need to create a recipe card… you are truly going to be amazed at how fast you can whip these up! Now the measurements that I have included are for a single serving because this recipe is intended to be a quick, very simple and rushing to get out the door meal. However, feel free to double or even triple the recipe to yield a larger serving size and free the leftovers and eat them throughout the week.
To create these delicious three ingredient vegan chocolate protein pancakes, here is what you will need.
- 1 Ripe Banana
- 2 Flax Eggs
- 1 Scoop of Kashi GOLEAN Dark Cocoa Protein Powder
Feel free to use whatever egg substitute you typically cook with, we personally just make flax eggs in our home.
1 flax egg= 1 tablespoon of ground flax seed mixed with 3 tablespoons of water
After mixing the ingredient, place your flax egg mixture into the refrigerator for 15-30 minutes. The mixture will start to thicken up and have a more egg like consistency.
- Mix 1 ripe banana, 2 flax eggs, and 1 scoop of Kashi GOLEAN Dark Cocoa Protein Powder in a blender or food processor.
- Set your griddle or frying pan to a low-medium setting, spray it with cooking spray or spread on a little butter, and then place a spoonful of the batter on the griddle just like you would regular pancakes, only make them small! They tend to be a little flimsy, so the smaller you make them, the easier they will be to flip.
- Cook for approximately 2 minutes on each side, but use your spatula to lift up the edges and check your progress so you don’t accidentally burn them.
If you find tat you have a few extra minutes to spare, then feel free to get creative with this recipe! Add a dash of cinnamon, mix in some coconut flakes, toss in some vegan chocolate chips, or anything else you’d like to the batter! You could also puree strawberries or raspberries to use as a syrup. My final tip is to make sure you are using ripe bananas! The spottier they are the better. The riper your bananas, the sweeter your pancakes will turn out, plus if your bananas aren’t ripe enough they will be more difficult to blend.
