Slow Cooker Chicken Pot Pie

We had a few days dreary weather and with fall quickly creeping up on us, I decided to dust off the slow cooker and try out a new recipe! If you know anything about me it’s that I love simple recipes that are not time consuming. I came across a recipe for this dish and tweaked it a bit to make it simpler… the results were phenomenal! All three of my kids loved the recipe, which is a win in my book. Let me take you through the steps on how I created this delicious and simple slow cooker recipe!

Ingredients

  • 1 premade rotisserie chicken
  • 12oz bag of frozen peas & carrots
  • 2 cups quartered baby red potatoes
  • 1 large garlic clove, minced
  • 2 14.5oz cans of chicken broth
  • Thyme, black pepper & salt to season
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • 1/3 cup all-purpose flour
  • 1 8 ct. package southern-style biscuits

Time Saving Tip… I purchased one of those premade rotisserie chickens at my local grocery store! The cooking of the chicken for any type of recipe always seems to be the most time consuming, so I cut that time down by purchasing the premade rotisserie chickens. Once you get it home, allow the chicken to cool off… some grocery stores have ones cooled off already so grab that one if it is an option. You will then proceed to take off all the chicken and cut it into bite size pieces.

Once your chicken is prepped, you are going to place it in the slow cooker, along with frozen peas & carrots, celery, potatoes, salt, pepper, thyme and chicken broth. Set your slow cooker to low and allow to cook for 4 hours.  After your stew has cooked and veggies are soft, you will then take a microwave safe bowl and add the butter and heavy cream. Microwave in 30-second increments until the butter has melted and the cream is warm. Then you will slowly whisk in the flour. Add your butter/cream/flour mixture into the slow cooker. Stir to combine. Cover and continue to cook on low for another 45 minutes to an hour, or until mixture has thickened.

If you purchase a package of biscuits, make sure to pop them in the oven about 15 minutes prior to your stew being done. They are perfect for dipping in the stew, or simply eating them alongside the dish!

This was such a simple recipe and I was so pleased with the results! There are lots of ways to tweak this meal to your liking, but I wanted to create a recipe for those of you that don’t have as much time in the kitchen as you like… yet still want a hearty and mouth water dish the whole family will love!

  • After stew has cooked and veggies are soft, take a microwave safe bowl and add the butter and heavy cream

  1. Your photo looks very nice and delicious. I tried your steps in home, but I do not have enough time, so I just cooked 2 hours, not as long as your mentioned 4 hours. My stew is not soft and tasty as yours I think. This weekend let me try again. BTW, shall I must cook 4 hours with low power? Can I short the time?
