Mini Muffin Pancake Bites

My kids love pancakes and they have become something we greatly look forward to enjoying on weekend mornings.. you know, when there is actual time to make them! They have grown bored with all of my typical on the go breakfast foods and I decided it was time to change things up. I wanted a recipe that all three of my kids could make their own because they all have their own favorite foods. Plus I wanted a breakfast food that could be frozen and then warms up quickly in the mornings. It only made sense to take their favorite breakfast meal and make them miniature! That is where these adorable mini muffin pancake bites came from, the perfect size for little hands.
All you need to do to create these mini muffin pancakes is to mix up your favorite brand of pancake mix. Pour the mix into a mini muffin pan and have your kid(s) top with their favorite food. We went with blueberries, strawberries and mini chocolate chips.. but there are so many other foods you could top your pancake muffins with!
Cook them in the oven at 400 degrees for about 10 minutes and making sure to keep a close eye on them when they cook because they cook fast! Take them out right away to avoid burning and allow them to cool before removing them from the pan.
