Garlic Sweet Potato Mash
With the holidays just around the corner, it’s time to start thinking about all of those favorite fall foods we love! I am always looking for ways to not only simply a dish, but make it a healthier version without compromising the great taste. We so often tend to mix in sugar and syrups to this dish, when this is dish that is sweet all on it’s own! Don’t over-complicate things my friends, there are only a few healthy ingredients to add to this dish to give it a sweet and delightful flavor.
For this recipe you are going to need to following ingredients:
- 4 medium sweet potatoes, peeled & cubed
- 1 tbsp butter
- 3 cloves garlic, minced
- 1/2 cup almond milk
- 2 tbsp light butter
- salt & pepper, to taste
Peel and cubed your potatoes, then you are going to boil them in a large pot until tender, drain in a colander. I like to mash mine up in the mixer, but feel free to use what ever method works best for you. Set aside.
Melt the butter in a pan and then sauté the garlic until lightly golden. Add your mashed sweet potatoes to the pan and mix. Slowly add the milk and continue to stir until creamy. Feel free to adjust the measurements according to your preference. Add some salt and pepper to taste. Serve with a dab of butter on top and sprinkle some parsley on there!
