Most of us already have kids back in school or returning shortly, which means life has gotten a whole lot busier this past month. Kids are stepping off from that school bus hungry and I am always looking for easy and delicious snacks to hold them over until dinner time. Hormel has a wide range of products that help inspire me to try or create new after school snacks. These products take simple treats like salad and pasta and add a little something extra to completely transform it. I don’t know about you… but every time I have a pasta salad with the the pepperoni minis… I just have to have one in every single bite, yum! Another great after school snack that the kids never complain about is a cheese tray. Simply cut up their favorite cheese in to squares, add some crackers and Hormel pepperoni, then a fancy mustard to top it off. My kids basically love anything they can use their hands to eat, plus kids really enjoy being able to make their own snack… it’s always fun to see how they will put together their snack!

I remember when I was a kid coming home from school and immediately running to the pantry to grab a can of the delicious Dinty Moore Beef Stew! This was seriously a staple in my childhood, a treat that I always looked forward to. I would eat all of the carrots and potatoes first, leaving the beef (my favorite part) for last and to this day, I still eat a bowl of beef stew in that order!

One of my most used products for creating after school snacks has to be the Skipp Natural peanut butter! Do you have any idea how many yummy treats can be concocted from peanut butter? A lot! One particular treat that I have recently become obsessed with and my kids are not complaining about are no bake energy bites. I am making these at least twice a week, they are a delicious power food that literally takes 10 minutes and there is no baking involved. I leave them in a bowl in the refrigerator where the kids can take them as they please.

Easy After School Snack Ideas {Plus No Bake Energy Bites Recipe}

Ingredients:

  • 1 cup (dry) oatmeal  (old-fashioned oats)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seed
  • 1/2 cup chocolate chips or cacao nibs (optional)
  • 1/3 cup honey or agave nectar
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract

Directions:

  1. Stir all of the ingredients together in a medium sized bowl until thoroughly mixed.
  2. Cover and allow to chill in the refrigerator for half an hour.
  3. Once chilled, roll into balls of whatever size you would like. Store in an airtight container and keep refrigerated for up to 1 week.
  4. Makes about 20-25 balls.
