Delicious & Easy Vegan Burrito Recipe
So I went out to eat with my kids and carnivore of a husband this weekend, of course we ended up at a BBQ restaurant. I wasn’t surprised, however quite disappointed to find that there wasn’t a single option for a vegan such as myself on their menu. I decided it was time to improvise and create something myself. I found a southwest chicken wrap, told them to take out the chicken and replace it with black beans, mushrooms, extra diced tomatoes and avocados. When the waitress returned to the table about ten minutes later she says to me “I have to say that your sandwich looks absolutely delicious, even without the chicken!” Yes… team vegan for the win! I was quite proud of myself and pleased I was able to enjoy dinner with my family. This eventually inspired me to make something similar at home. I wasn’t really in the mood for another wrap, but a burrito was sounding extra amazing! Last night for dinner I finally made these delicious and easy vegan burritos and oh my… yummm!
For this recipe I grabbed the large restaurant style burritos wraps, I find with the smaller ones I just can’t seem to fit all of the ingredients and still be able to successfully wrap it. I know a lot of people like to add refried beans to their burritos, I am not a huge fan of them but you are welcome to add them to this recipe.
There really is no complicated explanation on how to create these delicious burritos. Cook your rice, drain the beans and corn well, and prep your other veggies. Here is what you are going to need for this recipe:
Ingredients
- Large restaurant style wraps
- White Rice
- Black Beans
- Corn
- Lettuce
- Avocados
- Daiya Cheese
- Salsa
- Garlic Hummus
How to Make These Epic Burritos!
Lay your wrap down on the counter and spread some of the garlic hummus on it. Place a layer of rice, top with black beans, corn, avocados, lettuce, Daiya cheese and salsa, and then wrap your burrito up tight. The final step is important, frying your burrito is going to change your life if you have never prepared it this way before! Simple add a small amount of EVOO to a frying pan and cook your burrito on medium heat for about 5-8 minutes each side. Make sure to keep a close eye on the burrito to ensure that it doesn’t burn. Once your burrito is hard and crispy on the outside, take it off the pan. Cut your burrito at an angle and serve on a plate with some extra salsa (I love to dip mine in it!)
