Pasta is another dish that my kids are always asking for during lunch time. I really don’t prefer purchasing the store bought pasta sauces because the are full of so much sodium and artificial ingredients. I think many people don’t realize just how easy it is to make pasta sauce right at home. What I love most about creating sauces from scratch is that I know exactly what is going into it and I know that there aren’t any unhealthy ingredients being tossed in there. I am currently obsessed with this creamy vegan alfredo sauce… so good!

All you need for this recipes is about three cups of chopped cauliflower, almond milk, vegetable stock, onions, nutritional yeast, soy sauce, garlic lemon and sea salt.

Sauteed your onions and garlic on the stove top until translucent, then you are going to add the vegetable stock and cauliflower. Cover and let steam until all of the liquid has evaporated.

Transfer the cauliflower mix into a blender, adding the almond milk and other ingredients. Mix until creamy… and you are done! Yes, it was that simple! Mix into your favorite pasta. Top with some herbs and you are read to enjoy this delicious and healthy creamy vegan alfredo pasta sauce dish.

Ingredients
  1. 1 teaspoon olive oil
  2. ½ white onion, chopped
  3. 3 garlic cloves, crushed
  4. 3 cups chopped cauliflower
  5. 1 cup vegetable stock or water
  6. 1 cup almond milk
  7. 1-2 tablespoons nutritional yeast
  8. ½ tablespoon fresh squeezed lemon juice
  9. 1-2 teaspoons sea salt
  10. ½ teaspoon soy sauce

  2. Heat the oil in a medium-sized pot over medium-high heat. Add the onion and let it cook for 3-4 minutes, or until it is soft and translucent. Add the garlic and cook for 30 seconds. Add the cauliflower and the vegetable stock or water to the pot, cover with a lid, and let the cauliflower steam until liquid has evaporated.
  3. Transfer the cauliflower to a blender and blend on high until smooth. Add the remaining ingredients (starting with 1 tablespoon of nutritional yeast and 1 teaspoon of sea salt) and blend again. Taste and add more nutritional yeast and sea salt, if you'd like.
  4. Mix right away with a box of your favorite pasta and top with your favorite herbs and seasonings. Enjoy!
