Day Of The Dead Sugar Skull Fruit Pizza

A few months ago the kids and I headed to the movies not realizing we were about to fall in love with one of the best movies we have seen in awhile! I laughed… I cried… smiled… COCO.was.incredible! I knew within seconds from the movie ending that we were going to buy it as soon as it was out on blu-ray!

Ingredients
  1. 2 large eggs
  2. 2⁄3 cup vegetable oil
  3. 2 teaspoons vanilla
  4. 3⁄4 cup white sugar
  5. 2 cups flour
  6. 2 teaspoons baking powder
  7. 1⁄2 teaspoon salt
Instructions
  1. Preheat oven to 350 degrees Fahrenheit
  2. Beat together eggs, oil, vanilla and sugar; add flour, baking powder and salt and mix well.
  3. Lightly grease a pizza pan and press the dough into the pan to form a thin and even cookie dough crust
  4. Bake for 10-12 minutes or until lightly browned
  5. Remove from the oven and let it cool for 5 minutes
  6. While the cookie is still warm and soft cut out the shape of a skull
  7. Let the cookie cool completely

Yogurt Cream Cheese Frosting

Ingredients
  1. 1 cup low fat cream cheese
  2. 1/2 cup plain Greek yogurt
  3. ¾ cup powdered sugar
  4. 1 tsp pure vanilla extract
Instructions
  1. In a medium bowl bring the cream cheese, yogurt, powdered sugar and vanilla together and whisk until smooth
  2. Place in the refrigerator for 30 minutes to thicken

 All that is left to do now is spread the yogurt cream cheese frosting evenly on the giant skull cookie. Get creative and add fruit to the skull however you please!

This is such a simple and fun way to celebrate the release of COCO! Also a great way to encourage the kids to eat fruit. I added different pieces of fruit around the edges of the plate because they really enjoyed placing their own toppings on the pizza.

This recipe was also really easy to make, I can think of so many other ways to use this recipe towards other themes throughout the summer!

  1. My son and I have not seen the movie. When it was out at the movies he was sick. So we would really like to see it.
