What is Virgin Coconut Oil

Virgin Coconut Oil is a food, and is one of the best cooking oils you can use. It has been a staple cooking oil for thousands of years in tropical climates. As a cooking oil, its chemical structure is kept in tact and therefore is resistant to mutations of fatty acid chains even when used in higher cooking temperatures, unlike most vegetable oils. Research shows that the medium chain fatty acids found in coconut oil boosts the body’s metabolism, raises body temperatures, and helps provide greater energy which can lead to weight loss.

Virgin Coconut oil is rich in lauric acid, a nutrient that supports the body’s immune system. Lauric acid is also found in human mother’s milk.  Dr. Mary Enig suggests the average adult include about 3.5 tablespoons of coconut oil per day in their diet to take in an equivalent amount of lauric acid that a nursing infant would receive from breast milk.

Virgin Coconut Oil can only be achieved by using fresh coconut meat or what is called non-copra. Chemicals and high heating are not used in further refining, since the natural, pure coconut oil is very stable with a shelf life of several years.

How Do You Use Virgin Coconut Oil?

There are hundreds of uses for coconut oil in the kitchen, with multiple ways of incorporating coconut oil into a healthy diet. As a cooking oil, replace polyunsaturated oils, “vegetable oils” such as corn and soy, with coconut oil. Coconut oil should be your main cooking oil, as it is heat stable, and will not become toxic in uses that require high heat.

My Review

I am always seeking out ways to make eating in our household a healthier experience, but it never occurred to me that I should change what I was cooking my food in. I must admit that I am not a fan of coconut flavor and was worried all of my food would taste terrible after using the organic virgin coconut oil. Boy was I wrong! The first meal that I fried up on the stove, with the coconut oil, ended up being a huge hit and my children ate all of it.  I was surprised to find that the food did not contain the overpowering coconut flavor that I had imagined. The food contained a nice clean feeling, wasn’t greasy at all, as opposed to how it would have come out had I used virgin olive oil. The overall food experience that night was very positive and I was so excited to have found something healthy and enjoyable by all. I absolutely love how easy the coconut oil is to work with and that it’s not a messy product. You can easily scoop a small portion for your cooking needs and it’s also great as a spread! I find myself using it as a spread for sandwiches and banquettes more than anything else. I have also noticed that a little bit goes a long way and essentially allows me to get more out of my purchase. This is an overall fantastic, healthy alternative to all other cooking oils and I highly recommend you make the switch!
