Oven Fried Popcorn Cauliflower Bites

I have another amazing vegan recipe to share with you and oh.my.word you guys… this recipe has been a life changer in our home! One food that we really liked before going vegan was popcorn shrimp, something I didn’t believe I would ever be able to recreate as a vegan. Boy I was wrong. We have been making these oven fried popcorn cauliflower bites and they are incredible. They are extra crispy on the outside and extra chewy on the inside, just like regular popcorn shrimp. The flavor is perfection and they are the perfect afternoon lunch for the entire family.

The steps are pretty easy for this recipe, simply take a cauliflower and chop into bit sized pieces. You are going to create two batters for this recipe (wet and dry) and coat the cauliflower bites into each, following the steps in the recipe card at the end of this post.

I didn’t include any salt in my recipe because I was trying my best to keep the sodium low, but you are welcome to add some salt to the finished product.

 I have mentioned this is previous recipes… if you don’t have a baking rack I highly recommend you go out and get one. There are really cheap and they make baking so much more easier because the heat gets underneath the food, eliminating the need to flip them (plus they don’t get that dreaded soggy side!)

Ingredients
  1. 1 cauliflower cut into bite sized pieces
Wet batter ingredients
  1. 1 cup of flour
  2. 1 cup of water
  3. 4 tbsp of sriracha sauce
  4. 2 tsp of garlic powder
  5. 1 tsp of onion powder
  6. 2 tsp of old bay seasoning
Dry Batter
  1. 2 cups of vegan panko bread crumbs
  2. 2 tsp of old bay seasoning
Instructions
  1. First preheat the oven to 375*
  2. Combine all of the wet batter ingredients into a bowl and mix well. Set the batter aside.
  3. Add all the dry batter ingredients in a bowl and mix well.
  4. Place a baking rack on a cookie sheet and spray with non stick spray
  5. Place the cauliflower into the wet batter, making sure that each piece is thoroughly coated. Then place them into the panko bread mixture and make sure they are thoroughly coated. Place each piece onto the baking rack and place in the oven and cook for about 15-25 minutes depending on how crisp you like them.
Preparation
  1. First preheat the oven to 375*
  2. combine all of the wet batter ingredients into a bowl and mix well. Set the batter aside.
  3. Now add all the dry batter ingredients in a bowl and mix well.
  4. Place a piece of parchment paper on a cookie sheet and drizzle with about 3 tbs of oil.
  5. Now place the cauliflower into the wet batter, making sure that each piece is thoroughly coated. Then place them into the panko bread mixture and make sure they are thoroughly coated. Place each piece onto the cookie sheet and place in the oven and cook for about 7-8 minutes on each side or until crispy and golden brown on each side.
  6. Drizzle with fresh lemon juice and enjoy with a vegan tarter sauce!
  7. Add salt and pepper to taste and drizzle with fresh lemon juice.
