Deli Style Pastrami & Swiss Sandwich

The kids here in Georgia are officially on summer break as of last week and my days now consist of finding ways to entertain and feed all three kids in a timely manner. Now you all know that I am the queen of simple and fast recipes, there is nothing more satisfying than creating delicious meals that look like you spent lots of time making. One of my favorite lunch recipes right now is a deli style pastrami and swiss sandwich, with a secret ingredient that you are going to love

Deli Style Pastrami & Swiss Sandwich

Here is what you will need to create this simple and delicious sandwich!
 
Ingredients
  • Red Onion
  • Olive Oil
  • Pinch Sea Salt
  • Balsamic Vinegar
  • Seeded Bread (toasted)
  • Mayonnaise
  • Columbus ABF Deli Pastrami
  • Swiss Cheese Slices
  • Spring Mix

Deli Style Pastrami & Swiss Sandwich

Instructions
 
  1. Remove skin from onion and cut in half, slice your onion into long thin pieces
  2. Sautee onions in olive oil on a pan over medium heat, 15 minutes, stir frequently.
  3. Remove onions from heat and stir in salt and balsamic vinegar (just enough to saturate the onions)
  4. Spread mayo onto toasted bread.
  5. Layer each sandwich with a few slices of pastramit, balsamic onions, swiss cheese and spring mix

The balsamic onions give this sandwich a sweet taste that isn’t overpowering, complements the pastrami perfectly! For this recipe we used Columbus Craft Meats, not only for their quality products, but because they offer Antibiotic-Free Meat!
