You have heard me mention this time and time again that I am not the most talented person in the kitchen. I have more kitchen disasters than actual meals, so I tend to stick to the same old recipes. I am not very adventurous when it comes to trying out new recipes, in fear that I will completely destroy dinner and then have three very hungry and upset children as a result. However, there is one product that is basically fool proof and I have get to not mess up any time I cook them. I am talking about none other than the Betty Crocker™ Casserole Potatoes. They have a great variety of flavors and styles and they make the perfect side dish with any meal. I can’t begin to tell you how many times they have come to the rescue at dinner time when I am running behind. I recently discovered that there are some amazing recipes you can create with the Betty Crocker™ Casserole Potatoes… and I thought, hey… let’s give it a try, how hard can it be? Since I am a huge fan of green bean casserole, I was immediately drawn to the Crispy French Onion Scalloped Potato Casserole recipes. There were only a handful of ingredients and it required just a few extra steps.

 Crispy French Onion Scalloped Potato Casserole

Ingredients

  • 1 box (4.7 oz) Betty Crocker™ scalloped potatoes
  • 2 cups boiling water
  • 2/3 cup milk
  • 1 tablespoon butter
  • 1 cup French onion-flavored sour cream dip
  • 1 cup French-fried onions
  • 1 tablespoon chopped fresh parsley, if desired

Directions

  1.  Heat oven to 375°F. Spray 1 1/2-quart glass baking dish with cooking spray.
  2. Make potatoes as directed on box for stove-top directions. Stir in sour cream dip. Pour mixture into baking dish. Top with onions.
  3. Bake 12 to 15 minutes or until sauce is bubbling. Sprinkle with parsley. Let stand 5 minutes before serving (sauce will thicken as it stands).
