I am saddened by the fact that we are grilling less and less now that fall is in full swing and life has just been pretty busy lately. I have been inspired to come up with more simple and delicious recipes for cooking in the kitchen. I know many of you can relate that we don’t always have the time and energy in the evening to spend cooking in the kitchen… fast, simple, easy recipes are my best friend! I have always found that marinating and adding sauces to chicken can completely transform a meal and it’s so incredible easy to prepare. Add you favorite sides and dinner will be ready in no time. My latest food obsession is Mexican Chipotle Chicken!

We have enjoyed BBQ chicken all summer long and I decided it was time to mix things up! I marinated some boneless chicken in some mouthwatering Mexican chipotle sauce. When it was time to cook dinner, I simple put it in the oven on 350 degrees and let it cook for 15-25 minutes. Corn, beans and rice seemed to match perfectly with this chicken, all sides that my kids love!

The next time you are in a rush to get dinner cooking and the kids are at your feet asking “is dinner ready yet?” I highly recommend you try this Mexican chicken! I always make sure to keep my pantry stocked with sauces, it has saved what would have potentially been a boring dinner into something that tastes like you spend hours preparing!
