Clean Eating : Zucchini Boats Recipe

Zucchini Boats

I’m sharing #SausageFamily in my life as part of a Johnsonville sponsored series for Socialstars™

Overall our family eats very healthy and we eliminated many bad foods throughout the years, however last month I decided to take things one step further and start clean eating! What does eating clean mean exactly? It’s simple! No processed foods and cook all of your foods with real ingredients. I have been experimenting with a lot of ground meet, it’s such a simple way to make vegetables more appetizing, especially if you have little ones in the home. the Italian Mild Ground Sausage is the convenient and easy way to cook your sausage. I have really been struggling to find a way to get the kids to eat more zucchini, then I cam across this super easy recipe for zucchini boats! I am all about simple and quick meals, I tend to get burnt out fast if I try to recreate extravagant meals for my family. I could not believe how amazing these zucchini boats turned out, my children ate them without hesitation.

I was inspired to create this meal because one of the main ingredients did not require touching the meat with my hands. I simply toss the Johnsonville All Natural Fresh Italian Mild Ground Sausage in the pan to start browning. Unlike ground beef or turkey, however, this meat product is much more flavorful and really added to the greatness of this dish.

This recipe literally only requires four main ingredients and two optional seasonings. The Italian sausage heats up really fast on the stove and once mixed with the pasta sauce, you are left with an amazing filling for your zucchini boats.

Halve your zucchini, scoop out the center, fill with the meat sauce, then top with cheese! Fifteen minutes in the oven then these delicious boats are ready for consumption! I prefer to add the basil and garlic salt after they are done cooking, as the basil tends to burn in the oven. Again, I can not emphasize enough how amazing these turned out! if you are not a fan of zucchini, I promise you will have a change of heart after trying these. Such little prep work needed in order to create a delicious and clean meal. So skip that drive thru and cook at home, I promise you will see a change in your healthy once you start making more healthy choices!
