This doesn’t have to be a complicated and costly gathering and with this simple chicken enchilada dip, you will have plenty of happy guest!

Here is everything you need for the recipe:

  • 1/2 pound chicken (about 1 1/2-2 cups), cooked and shredded

The first thing you need to do is cook the chicken, your best option is to boil it in some water until it can be easily shredded. Once your chicken is cooked and shredded, allow to cool and then mix it with the enchilada sauce, beans, corn and cheddar cheese and half a cup of the monterey jack cheese. Place the mixture into a shallow baking dish and then sprinkle 1 cup of the monterey jack cheese on top (feel free to add more if you like your dip extra cheesy on top).

Bake the enchilada dip in the oven at 350F until the top is a light golden brown and the sides are bubbling (this generally takes about 15-20 minutes.) Then you are ready to serve your guest and host the most memorable Cinco de Mayo party this year!

My mother once told me that the best way to keep people happy at any gathering is to make sure they always have something to drink! You never want to leave your guests feeling parched and wondering where to get a drink. People get grumpy when they are thirsty! My advice is to always keep drinks readily available so they can help themselves to whatever they are in the mood for.

Nothing complements your Cinco de Mayo dishes better than an ice cold Corona Light! An ice bucket full of Coronas and lime slices is something you will always see when we host a party, the light and crisp flavor goes very well with just about any meal or appetizer. Corona Light is a pilsner-style lager with a fruity-honey aroma. If you are seeking a light beer that doesn’t lack in flavor and is perfect for pairing with spicy and  citrus-infused dishes… then you have met your match!

If you are like my husband and prefer a dark and bold beer, then Modelo Negra is a great option! This is a medium-bodied lager with slow-roasted caramel malts and intense flavors. This Munich Dunkel-style Lager contains a rich flavor and a smooth taste. This is yet another beverage that is perfect for pairing with all of your Cinco de Mayo dishes and a perfect way to enhance the flavors.
